Today was a big day at our house, it was open a cheese day! OK, so I know that’s not an actual recognized holiday, but when you make something by hand for 9 hours, seal it in wax and stick it in a dark damp room for two months, not knowing if you have cheese or a moldy mass of goo, its quite exciting to crack it open. As an amateur cheese maker, all sorts of not good can happen, you really don’t know if at the moment of reveal you will have golden deliciousness or a stink bomb that can knock over a cow.
So imagine my delight when this happened!

This is Jack, Joint Effort Jack. A simple to the point jack cheese made with raw milk, that was a collaboration between my husband and I, we tag teamed this throughout the day because we were busy pulling up floors, but that’s another story
